Composition of gliadins in some Yugoslav wheat (Triticum aestivum) varieties

Polyacrylamide gel electrophoresis (PAGE) techniques were used for the analysis of 14 Yugoslav wheat cultivars. Electrophoregrams were evaluated for the relative mobilities of electrophoretic bands and their intensities. A comparison factor was computed which was higher for closely related cultivars (for example, cultivars KG-56 and KG-58). The wheat varieties showed great variation in their electrophoretic gliadin composition, with 72 different bands of gliadins found. For one cultivar of wheat, 23-30 components of gliadins were found. Chromatograms by HPLC were also observed.
